Meal Planning

So, I'm the grocery shopper in the family. I know I can be a little OCD in a lot of areas and this is probably one of them. I have a notepad that hangs on the refrigerator. On the right hand side of the notepad is our 'running' list of items that we need. Then the night before I grocery shop, I write the day of the week on the left side of that notepad. From there, I comb through my recipe books or 3-ring binders of printed recipes to decide what I will be making for each of the meals. Since the recipe is right there in front of me, I can then add any ingredients that I know I don't have to my 'running' list of items on the right side. Now, in a perfect world, I would cook each of those meals on their perspective day of the week... haha... my world is so far from perfect it isn't even funny!! French Toast

Last night, I made Leanne Vogel's (Healthful Pursuit) Flaxseed Focaccia Bread / French Toast. Please forgive me, I forgot to take a picture of it last night. It was pretty darn good though! & very Filling! For the French Toast part I used 1 egg per person + 1/4c. Unsweetened Vanilla Almond Milk + Cinnamon + Ground Nutmeg. Beat these ingredients together in a container big enough to dip your bread into. You can just use a fork or a little whisk for the beating. Meanwhile, heat your skillet/griddle w/ 1 T. Coconut Oil (or your choice oil). After you dip your bread in the 'egg coating' on both sides, place on your griddle. I like to sprinkle just a little bit more cinnamon & nutmeg on my bread at this time. Grill your bread til it has a nice caramel color to it on each side. My husband used sugar free pancake syrup on his but I decided to use about 2 tsp. Natural Peanut Butter per slice of bread and 1 tsp. Sugar Free Jelly/Jam per slice of bread on mine. Both wer

Slow Cooker Salsa Chicken with Curry

I know sometimes my pictures don't look the prettiest, but boy oh boy the food is delicious! Tonight's dinner was so quick and easy and oh so delicious! If you follow me on instagram (@shugarnotsspice), or have seen my last few food pics, you might have been wondering why my food is always on paper plates or plastic... Well, all my dishes are packed away. Since we put our house up for sale, I've only kept the bare bones of necessities out. It's been a little crazy, but that doesn't mean that I stop cooking! Here's the recipe! ​ Slow Cooker Salsa Chicken with Curry 1-1.5 lb skinless, boneless Chicken Tenders 1 sm. Onion, diced 16 oz. Salsa 1 t. Curry (or more - I love curry!) 1 c. Sour Cream (full fat) riced cauliflower or roasted broccoli or another amazing veggie you love! 1. Place all ingredients but the Sour Cream (& your veggie of choice) into a 3qt. Slow Cooker. Turn your slow cooker on low for 6-8 hours or high 3-4 hours. 2.

Keto Butter Chicken with Naan (Indian)

Oh how I LOVE Indian food!!  Tonight's dinner was from Maria Emmerich's cookbook:  It was delicious!   and then we topped it off with homemade  ​ Coffee Ice Cream w/ Chocolate Chips ! 1 cup Heavy Whipping Cream 1 t. Vanilla Extract 1 t. Instant Decaf Coffee Grinds (add more for a stronger flavor) 1 1/2 T. Swerve Sugar Free Chocolate Chips Mix the vanilla, Coffee, & Swerve together. Add the HWCream & mix thoroughly. Add to your ice cream maker and churn/turn on. I can't ever wait very long, so our Keto ice cream is soft. I add the chocolate chips right before I'm ready to scoop it out. I have heard that if you freeze any left overs that it will get solid as a rock. We don't have leftovers! :-P   The recipe above serves 2 small portions. No worries if you don't have an ice cream maker... just put all ingredients into a mason jar. Put the lid on the jar. My ketones were back up today. And my scale was down! Not beyond my 44.6 lbs, but at least to 44.4 lbs. That should have been the start of a great day, but sadly it went down hill from there. :-(   Have you ever had one of those days? So, by supper time, I was exhausted and didn't feel like doing anything. Eggs and bacon are a great meal while on a Keto diet! Especially those nights when you just don't feel like making anything!  Pop your bacon in the oven on a greased cookie sheet so you don't have a stove top mess (for 20-25 min). You can add cheese & veggies to your eggs (scrambled or omelet) or make an egg sandwich with Cloud Bread Rolls/Oopsie Rolls.  Have you tried Oopsie Rolls yet? Bacon Wrapped Tilapia

Oh My Gosh.... This meal was delicious tonight! The guys had green beans with their fish, but I opted for riced cauliflower w/ lots of butter. But back to the fish... this recipe came from WickedStuffed Keto Blog. Her recipe called for a 350* oven for 20-30 min, but I like my bacon crispier than that so I bumped it to 450* after 15 min and went an additional 10-12 min. It's a super easy recipe: spray your cookie sheet, pat dry your fillets, spread butter (she suggest ghee) on each fillet, sprinkle w/ dried basil & pepper. Then wrap 2-3 pieces of bacon around your fillet and bake. The 'dipping' sauce was simply 1/4c. Mayo + 1-1.5T. Lemon Juice + pepper. I would definitely make this again. My son (15yrs.) even ate it with no complaints!

Staying in Ketosis...

If you're new to Keto, Ketosis is when the body does not have enough glucose for energy so it burns stored fats instead. That is exactly what we are aiming for in a Ketogenic Diet. When you eliminate or reduce the carbs entering the body, then the body must resort to the stored fats. However, if you cheat (eating too many carbs or the wrong carbs), then you 'throw' your body out of Ketosis and it takes longer to get back into that fat burning mode again. That's what I did this weekend and am 'paying' for it now! 😡 I didn't just eat too many carbs, I was totally eating the wrong kinds of carbs! Are you wondering what I ate? Ok, I'll be brutally honest... fried/breaded chicken buffalo bites, fried/breaded cheese balls, chinese chicken and broccoli in brown sauce (no doubt had sugar and who knows what else in it!- But I didn't have the rice - oh wait.... I had the egg roll!) AND I had a Dairy Queen blizzard! I know!! I totally went off the rails!

Keto Journey

WoW! It has been way too long since I've blogged! Since then, I lost 40 lbs total and put it all back on :-( However, I started on a Keto Journey back in the end of February this year (2017). It all started because of my husbands physical in the beginning of the year. His blood work came back pre-diabetic. He was already on blood pressure medicine, cholesterol medicine, and something else (can't remember off the top of my head...) Anyway, so he knew someone who was following the Fork Over Knives lifestyle. We tried it.... barely lasted a month before we decided that way was not for us! So, I started researching and came across something called Keto. Keto or Ketogenic is basically a low carb, moderate protein, high fat, no sugar lifestyle. We decided to try it! But what that also meant was NO bread, NO potatoes, NO rice, NO pasta... WHAT?? My Italian husband would no longer be allowed to have Pasta, Pizza, Subs?? That's right!!
