Cheese Taco Shells

Ya'll, this recipe is so easy and fun! I was so excited to have 'tacos' again!

Line a cookie sheet with parchment paper. Make round piles/areas (I spread it out a little, but don't leave any holes) of shredded cheese.

Bake at 350* for 5-10 min.

Mine started to get brown around the edges and bubbly in the center.

Pull from over and drape over the edge of a pan or wooden spoon or something to give it the taco shell shape. Let cool. Then fill!

That's it! So easy! Enjoy!!

Best Ever BBQ Sauce

Y'all... I just made the best homemade BBQ Sauce that I have ever tasted!! If you are looking for a really easy and tasty sugar-free BBQ Sauce, you have got to make this one!! I found this recipe on Wholesome Yum's site. I followed the recipe word for word.... except... I added 1/2 tsp. Old Bay Seasoning. It's divine! I can't wait to have it on our pork chops tomorrow night!

Chicken Parmesan

Ok, Not the greatest pic because I totally forgot until I was packing the leftovers! Again, this is an easy and delicious recipe!

I love my airfryer! It keeps the meat so juicy but the outside crispy! If you don't have an airfryer, you can totally do this in the oven!

Again, not much of a recipe, but here is what I did:

Dredge chicken through beaten eggs and then a combo of Pork Rind Dust/ Parmesan Cheese/ Italian Seasoning. Cook either in airfryer or oven at 375* for approx 20 min. Flip 1/2 way through to evenly crisp.

In the meantime, saute zucchini in butter and heat sauce in separate pan.

Once chicken is fully cooked, put a slice or 1/2 slice of provolone on each chicken piece. Put back in oven and watch carefully until cheese starts to get melty.

Plate it all and ENJOY!!

One Pot Lasagna

How many times have I told you how much I love 1 pot or 1 skillet meals?? Well, here's another one of my favorites!

This one I made in my dutch oven so I could finish it off in the oven. However, a skillet would work out perfect too!

One Pot Lasagna

Ingredients

2 T. Olive Oil3 lbs. ground Beef, drained1/2 chopped Onion or 1 T. Onion Flakes2 cloves Garlic6 T. Tomato Paste1 T. dried Oregano1 T. dried Basil1 t. Sea Salt1/2 t. Black Pepper1 t. Garlic Salt1/2 c. Parmesan Cheese, grated1 jar (24oz) Sauce1 1/2 c. Whole Milk Ricotta Cheese3 c. Mozzarella Cheese (keep 1/2 back for topping)
Directions

Heat oil in Dutch Oven or Lg Skillet over medium-high heat.Preheat oven to 400*.Cook ground Beef until browned. Drain excess oil and put beef back in the pan.Add remaining ingredients (except 1/2 of Mozzarella Cheese). Cook and stir until fully combined.Top with remaining Mozzarella Cheese and put into the oven.Bake for 20-30 min. until bubbly.
Enjoy!!

It's summer and what is one of the best side dishes for any barbeque?? Deviled Eggs!! Yes, that's right and who doesn't love Deviled Eggs?! (ok, maybe my son!)

These are so simple and easy and I'm sorry that I don't really have a recipe for them. But here are the ingredients for delicious, creamy deviled eggs.

Deviled Eggs

Eggs
Mayo
Yellow Mustard (sm. amount)
Garlic Salt
Minced Onion Flakes
Parsley Flakes (sm. amount)
Pickled Relish (sm. amount)
Sprinkle the tops with Paprika

Ingredients

24oz ground Pork2 T. toasted Sesame Oil1/2 medium Onion, diced3 cloves Garlic, minced5 Green Onions, chopped1 bag Coleslaw mix1 t. ground Ginger1 t. Sea Salt1/2 t. Black Pepper2 t. Sriracha Sauce3 T. Tamari Sauce or Coconut Aminos1 T. Apple Cider Vinegar2 T. toasted Sesame Seeds

Directions

Heat the sesame oil in a large skillet over medium-high heat.Add the onion, garlic, and white part of the chopped green onions to the skillet. Saute until the onions are translucent and the garlic is fragrant.Add the ground pork, ginger, salt, pepper, and sriracha sauce to the pan. Saute until the pork is cooked through.Add the coleslaw mix, tamari sauce, and apple cider vinegar and saute until the coleslaw is tender.Serve with the green parts of the onions and the sesame seeds on top.Top with additional sriracha…

These cookies while warm tasted delicious, but fell apart. When cool, the taste was still great, but did have the 'cooling' effect because of the erythritol. I'd still make these again! This recipe was by Maria Emmerich.

Crepes w/ "Banana's" Foster Syrup

These crepes may look like a messy pile, but they tasted sooo delicious!! I used a skillet that was a bit too big for making crepes. I suggest using a 6-8" skillet, not a 10-12"! Regardless, this recipe from KetogenicGirl is a keeper! I also used the most amazing Banana's Foster Syrup from Mari Emmerich. I do believe that this will be the only syrup I use when it comes to breakfast items. This was Amazing!!

1/2 t. Vanilla Extract
1/2 t. Maple Extract

Ok, this pizza crust from Gnom-Gnom is by far the closest one to the real deal! I still think I want to add a few ingredients, so I'll let you know how it goes, but you can actually pick this one up with your hands to eat! Now, I will tell you that my first attempt with this crust was in a skillet and I burnt the heck out of it... :-(    so my next attempt was on the baking stone in the oven and it came out PERFECT!! Try it!!

Oh, and you'll see, I made 1/2 regular with Pepperoni and 1/2 alfredo with Chicken!

Blueberry Cobbler

This delicious Cobbler came from LowCarbYum! This was delicious and I've eaten 1/2 the pan myself! My husband has also been enjoying it, whether for dessert or with his morning coffee! Definitely a keeper!

After a discussion with my mom about a dessert that she's made in the past, I believe I will be making some modifications to this recipe though. I'll keep you posted on it when I make it!

Coffee Ice Cream with Chocolate Chips

Coffee is our absolute flavor for Ice Cream/Milkshakes/Drinks, etc. So this recipe came together the other night during a craving, lol! My son finished off the remaining amount when he got home from work that night and the frozen consistency was beautiful!




Coffee Ice Cream with Chocolate Chips

Ingredients

1 c. Heavy Cream1 c. Unsweetened Vanilla Almond Milk1/2 c. Homemade Condensed Milk1 t. Vodka ( I used Rum because that's what I had on hand - to keep from completely freezing)1 t. Vanilla Extract1/2 t. Xanthan Gum1/2 c. Powdered SwerveChocolate Chips (preferably sugar-free)

Directions

Combine all ingredients except the Chocolate Chips and whisk together.If using an Ice Cream Maker (mine is a Cuisinart), Pour into the maker and follow the directions. This will take about 20-30 min. Add the Chocolate Chips about 5 min. before your time is up. Serve and enjoy!If not using an Ice Cream Maker, Add Chocolate Chips and pour into a freezer safe container. Strawberry Shortcake Mousse

OMGosh!!! This dessert was soooo delicious!! I wanted to lick my bowl and plan on making it for a non-Keto group!

For this dessert, I used the 'graham cracker' crust from Gnom-Gnom and the Strawberry Mousse from Sugar-Free Mom. This dessert will not disappoint you!!

Just so you know... I had Strawberries in the fridge, so used them instead of Raspberries like the recipe called for, however, I had Raspberry extract not Strawberry and used it anyway. Like I said before, this was sooo delicious!!! I hope you enjoy it as much as I did!!
