I've made Crab Cakes and Salmon Cakes in the past, but hadn't thought about Tuna Cakes until this week. I was looking for something different and with a good protein base when I came across a Tuna Cake recipe. I, of course, had to adjust the recipe to my liking and it turned out Great! The picture above is of the leftovers that my husband had today for lunch. I served it with a Spring Greens mix salad w/ cucumber & a light salad dressing. TUNA CAKE with DILL SAUCE

makes 6 large cakes

Ingredients
  • 5 (5oz) cans Albacore Tuna, drained
  • 4 Scallions, finely chopped
  • 1 - 1.5 ribs Celery, finely chopped
  • 2 tsp. Dijon Mustard
  • 2 T. Mayonnaise
  • 1 Egg, beaten
  • 1 tsp. Apple Cider Vinegar
  • 1 tsp. Old Bay Seasoning
  • 1/2 c. shredded Cheddar Cheese
  • 1/2 tsp. Garlic Salt
  • ground black pepper & additional salt to taste


Dill Sauce
  • 1/2 c. Greek Yogurt
  • 2 T. Mayonnaise
  • 1 Dill Pickle, minced
  • 2 T. fresh Dill, minced or 1 tsp. dried Dill
  • 1 tsp. Apple Cider Vinegar
  • 1/2 tsp. Dijon Mustard
  • 1 tsp. Pickle Juice
  • 1 pinch Swerve (powdered sweetener)
  • 1/8 tsp. Salt


Directions
  1. Combine sauce ingredients in a small bowl and set aside.
  2. In a large bowl, combine cake ingredients.
  3. Spray a baking sheet w/ non-stick spray.
  4. Scoop out tuna cake and form into 6 Flat disks on the prepared baking sheet.
  5. Set your oven to Broil and place the baking sheet on the top rack of your oven. Broil the tuna cakes until they are golden brown on top. Pull the baking sheet out and flip the tuna cakes. Place the baking sheet back under the broiler until the other side is golden brown.
  6. Serve with Dill Sauce. And ENJOY!
