Cast Iron Keto Dinner Rolls

Ok, so mine doesn't look like Dinner Rolls, lol. But I know why... I was in a hurry! Yep, The recipe specifically says to chill the dough for a minimum of 10 min but preferably longer and I didn't. Even though I didn't, this 'Dinner Roll' was GREAT!! and my husband liked how moist it was and the flavor. So are you chomping at the bit for the recipe yet? Chicken Bacon Ranch Casserole

Yum, Yum, Yum! This recipe came from Maya at WholesomeYum ! Pop over there and print out the recipe so I can tell you what I did differently and you can jot down notes if you want! Her recipe states that it can be made either with spinach or broccoli. Since I wanted to use spinach AND I was not making anything else for our dinner, I made some additions: Instead of 2 lbs. Chicken, I made 4 lbs. She didn't mention Salt or Pepper, so I added these while I was cooking my chicken in a skillet on the stove. (While my Bacon was cooking in the AirFryer.) I didn't have enough Ranch dressing so I added Creamy Caesar dressing. (Didn't measure, just dumped.) I probably (because I don't measure) used 1 c. of each Cheese IN the casserole and then another 1/2 c. each (or more) on top. I also added a 12 oz. bag of Riced Cauliflower to the whole mixture. Because this was my only meal today, I had a HUGE portion!  :-)   I personally believe that this would have served 6

Shrimp "Potage" Soup

This is a family favorite! (Potage is potato.) So when I decided to Ketofy this recipe the best alternative was the turnip. If you have not tried the turnip as a sub for potatoes, you are in for a treat! It has the same consistency as potatoes when used in soups or stews or casseroles. I have not tried mashing them because they still have a higher carb count than cauliflower. Shrimp Potage Soup Ingredients 1 c. Water 1 - 8 oz. Clam Juice 1/2 pt. Heavy Cream 1 c. Spinach, shredded 1 Garlic clove, chopped 2 T. Parsley, dried 2 tsp. Lemon Pepper 1 c. Shrimp, raw & peeled 1 Turnip root, cubed Basil Butter 2 T. Basil, dried 1/4 c. Butter 1 T. Parsley, dried 1 1/2 tsp. Lemon Juice 2 T. Parmesan cheese, grated Directions Cook all soup ingredients until steaming. Add Basil Butter before serving. ENJOY!!

Multi-Meat Chili

This is one of my husband's favorite meals! I love sour cream on mine! Multi-Meat Chili 3 lbs. Ground Beef 6 crispy Bacon strips, crumbled 12 oz. Shrimp, cooked 6 Chicken Tender strips, cooked (or 1 Breast) 3 Celery ribs 1/2 lg. Onion 8 cloves Garlic 1 frozen pkg Spinach 1 can Rotel 2 -15 oz. cans Diced Tomatoes 1 -16 oz. can Tomato Sauce 1 -6 oz. can Tomato Paste 1 -4 oz. can Green Chili's (or less) 2 T. Worcestershire sauce 1 T. Chili Powder 2 T. Cumin 1 T. Dried Oregano 1/4 t. Cayenne Pepper 1 t. Garlic Powder 1 t. Onion Powder 2 t. Sea Salt 1 t. Black Pepper Toppings: Green Onions, Cheddar Cheese, Sour Cream Crockpot Directions In a skillet over medium-high heat, cook the chopped onion & celery for about 5-7 min, until translucent. We love pulled pork at this house and it's so easy to make. Put it in a crock-pot all day and voila, dinner is ready! Of course, my son has his on rolls/bread, but my husband and I just put it on a plate with some Keto-Friendly BBQ sauce. I also like to add Broccoli Slaw on top of mine. I love the crunch! Pulled Pork Ingredients 3 lb. boneless Pork Loin Kitchen Bouquet 1/4 c. Golden Monk Fruit Sweetener 1/2 tsp. Cayenne Pepper 4 Garlic Cloves, minced 1 sm. Onion, chopped (or 2 T. dried Onion Flakes) 1/2 c. Apple Cider Vinegar 1 c. Water 2 tsp. Garlic Salt Salt & Pepper Keto-Friendly/Sugar-Free BBQ Sauce Directions Place Pork Loin in a crockpot and pour/smear Kitchen Bouquet all over it. Add Apple Cider Vinegar & Water around the pork loin. I'm a member of a private FB Keto Group and one of the members posted this recipe the other day. I only made 1/2 the recipe and made them into these bagel shapes for ease, instead of a loaf of bread. We had them with a simple chicken soup last night. I really like them! The recipe author is Diane Mott Rasmussen. Keto Yeast bread by Diane Mott Rasmussen Yeast activation 2 1/2 - 3 teaspoons active dry yeast look for non-GMO 1/2 cup warm water to activate yeast 1 tsp sugar to feed the yeast, the sugar is eaten by the yeast let sit ten minutes while you prepare the batter set oven to the lowest setting then turn off. Keto Crisp Sandwich (Grilled Sandwich)

This Keto Crisp Sandwich recipe by OhMyKeto is absolutely delicious!! I used a slice of Smoked Turkey Breast and a slice of Off The Bone Ham in my sandwich. She made hers with pickles and mustard and extra cheese along with her meat of choice. This recipe is definitely a keeper! I think I'll dry a BLT with it next! Keto Crisp Sandwich  by OhMyKeto Serves 2 (1g carb per serving) Ingredients 1/2 c. Pork Rind Crumbs 1/2 c. Mozzarella Cheese 2 T. Mayo 1 Egg Directions Whisk mayo & egg together. Super Easy DARK CHOCOLATES

I made these delicious chocolates to take with me while visiting family out of state. They are so simple and taste so good that even my non-Keto family & friends loved them. Believe me, you won't be able to stay out of them! However, I will be honest and let you know that there are 2g Carbs (1g Net) in each chocolate. That's because I still had some Semi-Sweet Bakers Chocolate in my cupboard that I decided to use. The next time I make these, I will probably double the 85% Chocolate portion and eliminate the Semi-Sweet Chocolate. That also means that I may have to adjust my Sweeteners too. Super Easy Dark Chocolates Ingredients 8 T. Coconut Oil 38 g. Semi-Sweet Bakers Chocolate 38 g. Unsweetened Bakers Chocolate 38 g. 85% Bakers Chocolate 1 t. Vanilla Extract 1 T.
