Only 788 Cookies Made...

Every year, I help my Mom bake cookies for shut-ins, our Pastors, etc. This year we did not go all out like we've done years before. Instead of over 1100 cookies, like last year, we only made 788. My Mom is not on a Ketogenic Diet, so all cookies were wheat flour and full sugar cane :-( I will be honest with you, I had 3 cookies!! Do you see those colorful cookies up in the left corner by that man's (my Dad) hand? Those are one of my all time favorites.... Butter Cookies! I just couldn't resist and needed to try one which led to three... ha ha! So, I need to convert this recipe to a Keto recipe... It won't be this week, but when I have it down, I'll share it with you! Until then, don't worry if you have a cookie or 3.... just jump back into your Keto eating right after that! Life Happens... & It's way too short to get bent out of shape over the little things!

Keto Pumpkin Custard Pie

A Pumpkin Custard Pie is one of my favorite childhood desserts. My mom's flaky pie crust is 2nd to NONE.... but now that I'm Keto, I had to make some changes. The crust I made, I borrowed from Low Carb Maven      Flakey Low Carb Crust It turned out delicious! I suggest covering the edges for the entire baking time of this pie. I felt that the edges got too dark, although it still tasted great! So, now for the insides of this pie: Preheat oven to 425* 2 c. Pumpkin Puree 1 c. powdered Erythritol (I 'powder' mine in a coffee bean grinder.) 1 pkt. Knox Gelatin 2 eggs + 1 egg yolk (yolk left from crust recipe) 1 c. Heavy Cream Whisk all ingredients together until smooth. Pour into pie crust and sprinkle heavily with Cinnamon. Bake at 425* for 15 minutes. Then turn down the oven temperature to 375* and bake for 40 more minutes. (or until knife comes out clean.) Enjoy warm or cold (my preference!), topped with real whipped cream! Fried Avocado Slices

Oh my... you must try this! I love avocados and when I heard about 'frying' my avocados, I was just a little bit skeptical. Now, I am hooked and make this several times a week! Try it and tell me how you like it! Heat a skillet with about 1 T. bacon grease. Place sliced avocado in the heated bacon grease. Fry on each side until golden brown. Place on a papertowel to soak up the extra grease, but salt them before the grease 'drys'. Enjoy!!

Pumpkin Season ALL Year Long???

I LOVE Pumpkin Season! And love all things pumpkin. So, I'm so glad that I learned early on (from my mom) how to 'put up' pumpkin (PA Dutch term). If you haven't 'put up' your own pumpkin before, let me tell you how easy it is! Then you can easily have Pumpkin ALL year long! My home state of PA grows this squash called Long Neck Pumpkins. The bulb end has all the seeds, and the 'neck' is all meat! If you have small round pumpkin pie pumpkins, you can 'put them up' the same way. When I moved to NY and found they had no idea what a long neck pumpkin was, I set out to grow my own. A local farmer in PA was kind enough to instruct me on how to start my seeds inside, since upstate NY has a shorter growing season than PA. I'm back in PA again and don't have to worry about growing my own if I don't want to. Every local farmer grows my favorite Long Necks! So, to start, I do wash the outside of my pumpkins.
