Chicken Bacon Ranch Casserole

Yum, Yum, Yum! This recipe came from Maya at WholesomeYum ! Pop over there and print out the recipe so I can tell you what I did differently and you can jot down notes if you want! Her recipe states that it can be made either with spinach or broccoli. Since I wanted to use spinach AND I was not making anything else for our dinner, I made some additions: Instead of 2 lbs. Chicken, I made 4 lbs. She didn't mention Salt or Pepper, so I added these while I was cooking my chicken in a skillet on the stove. (While my Bacon was cooking in the AirFryer.) I didn't have enough Ranch dressing so I added Creamy Caesar dressing. (Didn't measure, just dumped.) I probably (because I don't measure) used 1 c. of each Cheese IN the casserole and then another 1/2 c. each (or more) on top. I also added a 12 oz. bag of Riced Cauliflower to the whole mixture. Because this was my only meal today, I had a HUGE portion!  :-)   I personally believe that this would have served 6 ...

Chicken Cordon Bleu Casserole

This casserole was sooo good! I totally forgot to take a picture of it after it came out of the oven all ooey gooey :-(   But here is a pic of the leftovers. Believe it or not, I actually made a double batch in a 9x13 dish for only 4 of us. I was thinking that there would be plenty leftover for some great lunches. LOL.... everyone had huge seconds and this is all that is left! I think I've mentioned before how much I love casseroles. My mother always made a wonderful traditional Chicken Cordon Bleu. But, because I'm a 'lazy' cook, I hate pounding out the chicken and trying to roll it with the ham & cheese. I love bite size because I don't want to use a knife if I don't have to. Lazy Cabbage Roll Casserole

I absolutely LOVE casseroles! I love the simplicity of everything in 1 pot/dish with a casserole. I came across this recipe the other day and decided to give it a try. I've had cabbage rolls in the past (some good/ some NOT so good!) but have never made them because they looked labor intensive. Again, I LOVE simplicity when cooking because I just want to eat!! :-P      And I want to eat something delicious, not mediocre! So anyway, I tried this recipe from Wholesome Yum , I think it's a hit! I've loved it so much that I've been eating it for the last 3 days...lol... Since most nights are just my husband and I (and in some cases, just me due to his travels), I've been enjoying my leftovers. I haven't tried to freeze it yet, but I don't see why you couldn't.
