Pesto Chicken with Broccoli & 'Rice'

You all have 'heard' me say in the past how much I love casseroles! Well, I love 1 skillet dishes, just as much!! This recipe was so quick and easy and Delicious to boot!! Try it out and let me know what you think. Pesto Chicken with Broccoli & 'Rice' Ingredients 1 T. Olive Oil 2 lb. Chicken, cut into bite-sized pieces 12 oz. Cauliflower Rice 6 oz. Broccoli, cut into small pieces 1/3 c. Basil Pesto 1/3 c. Heavy Cream 1.5 c. Mozzarella Cheese, shredded 1.5 tsp. Garlic Salt Sea Salt & Black Pepper Directions Put olive oil in skillet. Place chicken pieces into skillet. Salt & Pepper to taste. Cook chicken over medium heat until completely cooked. Add cauliflower rice & broccoli, stirring til cooked. Add pesto, heavy cream, cheese, and garlic salt. Stir until cheese is melted and everything is heated through. Enjoy!!

Looking for something fun and so simple? These Sandwich Waffles by Maria Emmerich @ MariaMindBodyHealth are so easy to make and taste so good! Basically, the waffle is your bread, meat, and cheese all rolled into one. I will admit that my husband was a little skeptical when I told him what was for dinner last night, but these turned out great and he really enjoyed them. Dry Rub Country Pork Ribs

We just love a good, thick, and juicy country pork rib at this house! Just look at how delicious they look! This is our family's favorite dry rub recipe. Slightly sweet and spicy that doesn't overpower the delicious moist meat. BBQ sauce is not needed, but if you must, only use your Keto favorite! Dry Rub Country Pork Ribs serves approx 2-3 people Ingredients: 2 lbs. Country Pork Ribs (approx. 7 ribs) 1/4 c. Golden Monk Fruit 1/2 T. Chili Powder 1/2 T. Paprika 1/4 T. Black Pepper, ground 1 T. Garlic Powder 1 tsp. Onion Powder 1 tsp. Pink Himalayan Salt 1 tsp. Cumin, ground 1/2 tsp. Cinnamon, ground 1/4 tsp. Cayenne Pepper BBQ Sauce, optional Directions: For 2-3 hour cook time, preheat oven to 300*. or For 1 hour cook time, preheat oven to 350* In a medium bowl, mix all dry ingredients together. Chicken Fried Cauliflower 'Rice'

Here's another meal that I was too hungry to take the time to snap the photo before we started eating and now all you get is a photo of leftovers! This is another super easy and tasty recipe. Let me know what you think! Chicken Fried Cauliflower 'Rice' 2 lb Chicken, boneless, skinless, cut into bite-size pieces 1 T. Olive Oil 1 clove Garlic, chopped 1 rib Celery, chopped 2 Eggs, beaten 4 Green Onions, chopped 12 oz. Cauliflower Rice 1 tsp. Garlic Salt 1 tsp. Parsley 3 dashes of Fish Sauce 1/8 c. Tamari salt & pepper to taste and more Tamari if necessary Hot Sauce, optional Directions Heat oil in a large skillet. Add Chicken pieces, lightly salt & pepper, and stir til cooked through. Push Chicken to the outside edges of your skillet and add the Garlic & Celery to the center. Cook for about 2 min. before mixing in with the chicken. Push Chicken & celery to the outside edges of your skillet and add the beaten eggs to the center

Chicken Cordon Bleu Casserole

This casserole was sooo good! I totally forgot to take a picture of it after it came out of the oven all ooey gooey :-(   But here is a pic of the leftovers. Believe it or not, I actually made a double batch in a 9x13 dish for only 4 of us. I was thinking that there would be plenty leftover for some great lunches. LOL.... everyone had huge seconds and this is all that is left! I think I've mentioned before how much I love casseroles. My mother always made a wonderful traditional Chicken Cordon Bleu. But, because I'm a 'lazy' cook, I hate pounding out the chicken and trying to roll it with the ham & cheese. I love bite size because I don't want to use a knife if I don't have to. So, I created this amazing casserole. Try it out and let me know what you think! Chicken Cordon Bleu Casserole Ingredients 2 lb. Chicken, skinless, boneless, cut into bite-size pieces 6 oz. Buffalo Chicken Lettuce Boats

Looking for something SUPER EASY to make for dinner? This is it! AND it's Delicious!!  It can be made 2 different ways: Buffalo Chicken Lettuce Boats Ingredients 2 lbs Chicken, boneless, skinless 1/2 tsp. Onion Powder or 1/4 onion 1/2 tsp. Garlic Salt or 4 cloves garlic plus salt to taste 1/2 c. (or more) Buffalo Wing Sauce (I used Sweet Baby Rays) 10 large Lettuce leaves (I used Romaine) Blue Cheese Dressing or Ranch (or even Cesaer - that's what I used!) Directions (2 Different Ways)       On the Stove: Put chicken in a pot with enough water to cover. Bring to a boil and boil for 30 minutes (for tenders - 45min for breasts) Drain all but 1/4 cup-1/3 cup of the water. Shred the chicken. (I used my beaters to quickly and easily shred the chicken.) Add the Onion Powder, Garlic Salt, and Wing Sauce. Stir until combined. Line your lettuce leaves with your dressing of choice and add your chicken on top. Voila! Enjoy!       In the Crock

I've made Crab Cakes and Salmon Cakes in the past, but hadn't thought about Tuna Cakes until this week. I was looking for something different and with a good protein base when I came across a Tuna Cake recipe. I, of course, had to adjust the recipe to my liking and it turned out Great! The picture above is of the leftovers that my husband had today for lunch. I served it with a Spring Greens mix salad w/ cucumber & a light salad dressing.
