Sandwich Waffles

Image
Looking for something fun and so simple? These Sandwich Waffles by Maria Emmerich @ MariaMindBodyHealth are so easy to make and taste so good! Basically, the waffle is your bread, meat, and cheese all rolled into one. I will admit that my husband was a little skeptical when I told him what was for dinner last night, but these turned out great and he really enjoyed them. I'm thinking of keeping some of these on hand for snacking or traveling or even breakfast on the go! Jump over to Maria's page for the recipe! Let me know what you think!

Buffalo Chicken Lettuce Boats

Looking for something SUPER EASY to make for dinner? This is it! AND it's Delicious!!  It can be made 2 different ways: Buffalo Chicken Lettuce Boats Ingredients 2 lbs Chicken, boneless, skinless 1/2 tsp. Onion Powder or 1/4 onion 1/2 tsp. Garlic Salt or 4 cloves garlic plus salt to taste 1/2 c. (or more) Buffalo Wing Sauce (I used Sweet Baby Rays) 10 large Lettuce leaves (I used Romaine) Blue Cheese Dressing or Ranch (or even Cesaer - that's what I used!) Directions (2 Different Ways)       On the Stove: Put chicken in a pot with enough water to cover. Bring to a boil and boil for 30 minutes (for tenders - 45min for breasts) Drain all but 1/4 cup-1/3 cup of the water. Shred the chicken. (I used my beaters to quickly and easily shred the chicken.) Add the Onion Powder, Garlic Salt, and Wing Sauce. Stir until combined. Line your lettuce leaves with your dressing of choice and add your chicken on top. Voila! Enjoy!   ...
