Shrimp "Potage" Soup
This is a family favorite! (Potage is potato.) So when I decided to Ketofy this recipe the best alternative was the turnip. If you have not tried the turnip as a sub for potatoes, you are in for a treat! It has the same consistency as potatoes when used in soups or stews or casseroles. I have not tried mashing them because they still have a higher carb count than cauliflower.
Shrimp Potage Soup
Ingredients
- 1 c. Water
- 1 - 8 oz. Clam Juice
- 1/2 pt. Heavy Cream
- 1 c. Spinach, shredded
- 1 Garlic clove, chopped
- 2 T. Parsley, dried
- 2 tsp. Lemon Pepper
- 1 c. Shrimp, raw & peeled
- 1 Turnip root, cubed
Basil Butter
- 2 T. Basil, dried
- 1/4 c. Butter
- 1 T. Parsley, dried
- 1 1/2 tsp. Lemon Juice
- 2 T. Parmesan cheese, grated
Directions
- Cook all soup ingredients until steaming.
- Add Basil Butter before serving.
