Shrimp "Potage" Soup


This is a family favorite! (Potage is potato.) So when I decided to Ketofy this recipe the best alternative was the turnip. If you have not tried the turnip as a sub for potatoes, you are in for a treat! It has the same consistency as potatoes when used in soups or stews or casseroles. I have not tried mashing them because they still have a higher carb count than cauliflower.

Shrimp Potage Soup

Ingredients

  • 1 c. Water
  • 1 - 8 oz. Clam Juice
  • 1/2 pt. Heavy Cream
  • 1 c. Spinach, shredded
  • 1 Garlic clove, chopped
  • 2 T. Parsley, dried
  • 2 tsp. Lemon Pepper
  • 1 c. Shrimp, raw & peeled
  • 1 Turnip root, cubed


Basil Butter

  • 2 T. Basil, dried
  • 1/4 c. Butter
  • 1 T. Parsley, dried
  • 1 1/2 tsp. Lemon Juice
  • 2 T. Parmesan cheese, grated


Directions

  1. Cook all soup ingredients until steaming.
  2. Add Basil Butter before serving.
