Some days just call for Eggs & Bacon for dinner!
My ketones were back up today. And my scale was down! Not beyond my 44.6 lbs, but at least to 44.4 lbs. That should have been the start of a great day, but sadly it went down hill from there. :-(
Have you ever had one of those days? So, by supper time, I was exhausted and didn't feel like doing anything. Eggs and bacon are a great meal while on a Keto diet! Especially those nights when you just don't feel like making anything!
Pop your bacon in the oven on a greased cookie sheet so you don't have a stove top mess (for 20-25 min). You can add cheese & veggies to your eggs (scrambled or omelet) or make an egg sandwich with Cloud Bread Rolls/Oopsie Rolls.
Have you tried Oopsie Rolls yet? Oh My, They’re fluffy, light, thin “buns” made of eggs, cream cheese and some cream of tartar. So easy & quick to whip up!

Ingredients
- 3 large eggs
- 3 oz cream cheese
- 1/8 tsp cream of tartar
- 1/8 tsp salt
Instructions
1.
Preheat oven to 300°F.
2.
Separate the egg whites from the egg
yolks. Set both in different mixing bowls.
3.
Add the cream of tartar to the
whites and beat (with an electric hand mixer) until stiff peaks form.
4.
In the egg yolk bowl, add in cream
cheese and salt.
5.
Beat until the egg yolks are pale
yellow and doubled in size.
6.
Now fold the egg whites into the
cream cheese mixture. Don’t use the electric hand mixer here, just gently fold
together.
7.
Line a cookie sheet with parchment
paper, spray some oil to grease and dollop your batter on. You can make them as
big as you like, I like English muffin sized dollops. Flatten out your batter
just a bit.
8.
Bake for about 30-40 minutes. The
tops of the oopsie rolls should be golden and firm. Let them cool and enjoy
however you like! (or eat them hot out of the oven!)
