Coffee Ice Cream with Chocolate Chips
Coffee is our absolute flavor for Ice Cream/Milkshakes/Drinks, etc. So this recipe came together the other night during a craving, lol! My son finished off the remaining amount when he got home from work that night and the frozen consistency was beautiful!
Coffee Ice Cream with Chocolate Chips
Ingredients
- 1 c. Heavy Cream
- 1 c. Unsweetened Vanilla Almond Milk
- 1/2 c. Homemade Condensed Milk
- 1 t. Vodka ( I used Rum because that's what I had on hand - to keep from completely freezing)
- 1 t. Vanilla Extract
- 1/2 t. Xanthan Gum
- 1/2 c. Powdered Swerve
- Chocolate Chips (preferably sugar-free)
Directions
- Combine all ingredients except the Chocolate Chips and whisk together.
- If using an Ice Cream Maker (mine is a Cuisinart), Pour into the maker and follow the directions. This will take about 20-30 min. Add the Chocolate Chips about 5 min. before your time is up. Serve and enjoy!
- If not using an Ice Cream Maker, Add Chocolate Chips and pour into a freezer safe container. Freeze for approx. 4-6 hours (Depends on how 'frozen' you want it or how long you can stand to wait for it!) Serve and enjoy!
- Freeze any leftovers!
