Egg Roll in a Bowl ("CrackSlaw")

Egg Roll in a Bowl
Ingredients
- 24oz ground Pork
- 2 T. toasted Sesame Oil
- 1/2 medium Onion, diced
- 3 cloves Garlic, minced
- 5 Green Onions, chopped
- 1 bag Coleslaw mix
- 1 t. ground Ginger
- 1 t. Sea Salt
- 1/2 t. Black Pepper
- 2 t. Sriracha Sauce
- 3 T. Tamari Sauce or Coconut Aminos
- 1 T. Apple Cider Vinegar
- 2 T. toasted Sesame Seeds
Directions
- Heat the sesame oil in a large skillet over medium-high heat.
- Add the onion, garlic, and white part of the chopped green onions to the skillet. Saute until the onions are translucent and the garlic is fragrant.
- Add the ground pork, ginger, salt, pepper, and sriracha sauce to the pan. Saute until the pork is cooked through.
- Add the coleslaw mix, tamari sauce, and apple cider vinegar and saute until the coleslaw is tender.
- Serve with the green parts of the onions and the sesame seeds on top.
- Top with additional sriracha sauce if desired.
