Egg Roll in a Bowl

Ingredients

  • 24oz ground Pork
  • 2 T. toasted Sesame Oil
  • 1/2 medium Onion, diced
  • 3 cloves Garlic, minced
  • 5 Green Onions, chopped
  • 1 bag Coleslaw mix
  • 1 t. ground Ginger
  • 1 t. Sea Salt
  • 1/2 t. Black Pepper
  • 2 t. Sriracha Sauce
  • 3 T. Tamari Sauce or Coconut Aminos
  • 1 T. Apple Cider Vinegar
  • 2 T. toasted Sesame Seeds


Directions

  1. Heat the sesame oil in a large skillet over medium-high heat.
  2. Add the onion, garlic, and white part of the chopped green onions to the skillet. Saute until the onions are translucent and the garlic is fragrant.
  3. Add the ground pork, ginger, salt, pepper, and sriracha sauce to the pan. Saute until the pork is cooked through.
  4. Add the coleslaw mix, tamari sauce, and apple cider vinegar and saute until the coleslaw is tender.
  5. Serve with the green parts of the onions and the sesame seeds on top.
  6. Top with additional sriracha sauce if desired.
  7. Enjoy!!
