Lazy Cabbage Roll Casserole

I absolutely LOVE casseroles! I love the simplicity of everything in 1 pot/dish with a casserole. I came across this recipe the other day and decided to give it a try. I've had cabbage rolls in the past (some good/ some NOT so good!) but have never made them because they looked labor intensive. Again, I LOVE simplicity when cooking because I just want to eat!! :-P      And I want to eat something delicious, not mediocre! So anyway, I tried this recipe from Wholesome Yum , I think it's a hit! I've loved it so much that I've been eating it for the last 3 days...lol... Since most nights are just my husband and I (and in some cases, just me due to his travels), I've been enjoying my leftovers. I haven't tried to freeze it yet, but I don't see why you couldn't. Are you in a weight loss stall?

I was in a weight loss stall for the last year. I know for me, there were several factors. First, we sold our home in January and temporarily moved in with my parents. Second, I went on a 2-week cruise with my daughter, sister, and niece in March. This wasn't super detrimental to my weight loss. I actually only gained 6 lbs and we ate a lot! So, I wasn't upset with this gain and thought that I would easily lose it once I got home. However... Third, that move into my parents was wonderful on so many levels, except for eating. My mom has carbs and puts carbs into everything! Not to mention sugar!! Sugar in everything too!! ugh... I started our stay with trying to make our own foods, but that just got to be too difficult in the struggle with kitchen occupancy. So, I definitely didn't stay on the plan and gained another 4 lbs. Not horrible in the scheme of things, but not good either! Fourth, we finally moved to NC in July... and since then, I've been "cheat

copy cat Dirty John's Hot Dogs (bunless of course)

When I lived in upstate NY state, there was a place called Dirty John's Hot Dogs. They were obviously famous for their hot dogs. Long thin hot dogs, in a bun, served on a plate with a meat sauce, topped with onions and mustard. DELICIOUS!! So, one day in PA (no longer there - in NC now!), I thought that the internet had to have a recipe for this amazing meat sauce.... and I was right!! However, I always have to change it up a bit to suit my tastes. And it is a winner, my husband loves it! copy cat Dirty John's Hot Dog Meat Sauce 1lb Hamburger 1tsp Nutmeg 2.5tsp Onion Powder 2.5tsp Curry Powder 2.5tsp Chili Powder 1tsp Garlic Salt 1.5c water Salt & Pepper to taste Brown hamburger; add remaining ingredients. Simmer about 1 hr (do not let water boil away... add more if necessary). Put in blender to grind (I didn’t do this today). Serve over hot dogs with onions & mustard. Enjoy!!
