Bacon Wrapped Tilapia

Oh My Gosh.... This meal was delicious tonight! The guys had green beans with their fish, but I opted for riced cauliflower w/ lots of butter. But back to the fish... this recipe came from WickedStuffed Keto Blog. Her recipe called for a 350* oven for 20-30 min, but I like my bacon crispier than that so I bumped it to 450* after 15 min and went an additional 10-12 min. It's a super easy recipe: spray your cookie sheet, pat dry your fillets, spread butter (she suggest ghee) on each fillet, sprinkle w/ dried basil & pepper. Then wrap 2-3 pieces of bacon around your fillet and bake. The 'dipping' sauce was simply 1/4c. Mayo + 1-1.5T. Lemon Juice + pepper. I would definitely make this again. My son (15yrs.) even ate it with no complaints!

Staying in Ketosis...

If you're new to Keto, Ketosis is when the body does not have enough glucose for energy so it burns stored fats instead. That is exactly what we are aiming for in a Ketogenic Diet. When you eliminate or reduce the carbs entering the body, then the body must resort to the stored fats. However, if you cheat (eating too many carbs or the wrong carbs), then you 'throw' your body out of Ketosis and it takes longer to get back into that fat burning mode again. That's what I did this weekend and am 'paying' for it now! 😡 I didn't just eat too many carbs, I was totally eating the wrong kinds of carbs! Are you wondering what I ate? Ok, I'll be brutally honest... fried/breaded chicken buffalo bites, fried/breaded cheese balls, chinese chicken and broccoli in brown sauce (no doubt had sugar and who knows what else in it!- But I didn't have the rice - oh wait.... I had the egg roll!) AND I had a Dairy Queen blizzard! I know!! I totally went off the rails!
