French Toast

Last night, I made Leanne Vogel's (Healthful Pursuit) Flaxseed Focaccia Bread/ French Toast. Please forgive me, I forgot to take a picture of it last night. It was pretty darn good though! & very Filling!

For the French Toast part I used 1 egg per person + 1/4c. Unsweetened Vanilla Almond Milk + Cinnamon + Ground Nutmeg. Beat these ingredients together in a container big enough to dip your bread into. You can just use a fork or a little whisk for the beating.

Meanwhile, heat your skillet/griddle w/ 1 T. Coconut Oil (or your choice oil). After you dip your bread in the 'egg coating' on both sides, place on your griddle. I like to sprinkle just a little bit more cinnamon & nutmeg on my bread at this time. Grill your bread til it has a nice caramel color to it on each side.

My husband used sugar free pancake syrup on his but I decided to use about 2 tsp. Natural Peanut Butter per slice of bread and 1 tsp. Sugar Free Jelly/Jam per slice of bread on mine. Both were delicious and my husband said it was a keeper.

He even used the bread tonight for his cheeseburger. Although it was an eat with a fork kind of bread & burger, he enjoyed it none the less.
