Slow Cooker Salsa Chicken with Curry

I know sometimes my pictures don't look the prettiest, but boy oh boy the food is delicious! Tonight's dinner was so quick and easy and oh so delicious!

If you follow me on instagram (@shugarnotsspice), or have seen my last few food pics, you might have been wondering why my food is always on paper plates or plastic... Well, all my dishes are packed away. Since we put our house up for sale, I've only kept the bare bones of necessities out. It's been a little crazy, but that doesn't mean that I stop cooking!

Slow Cooker Salsa Chicken with Curry

1-1.5 lb skinless, boneless Chicken Tenders
1 sm. Onion, diced
16 oz. Salsa
1 t. Curry (or more - I love curry!)
1 c. Sour Cream (full fat)

riced cauliflower or roasted broccoli or another amazing veggie you love!

1. Place all ingredients but the Sour Cream (& your veggie of choice) into a 3qt. Slow Cooker. Turn your slow cooker on low for 6-8 hours or high 3-4 hours.

2. Add the Sour Cream and stir right before serving.

3. Serve over your choice of veggie.
