"Instant Pot" or Pressure Cookers

So the new rage in cooking is the "Instant Pot"... However, I did not want to spend over $120. And I was not interested in a small size. So, I did some checking around and I found over at WayFair.com a Kalorik Pressure Cooker 6.25qt for under $70!! Yes, now that's a deal. So, It arrived Tuesday and I had to wash it and use it immediately!! It is soooooooo awesome!! I love it!!!

I had turkey & chicken bones and spinach & egg plant in the freezer that I was holding for such an occasion so I could make some Bone Broth. I added apple cider vinegar, thyme, rosemary, garlic, & salt. Pressed all the appropriate buttons (Manual mode did take me a few minutes to figure out..lol...) and set it for 1 hr. Voila, in just over 1 hr (due to time for pressure build up and pressure release), I had amazing Bone Broth!

My next venture will be a Chili for tomorrow night's dinner. And since I have to work in the morning and then go do my grocery shopping, It won't matter that it hasn't been in the "crockpot" all day. It can be done in an hour...

Can't wait to try more recipes. I'll keep you posted!

How many times have I told you how much I love 1 pot or 1 skillet meals?? Well, here's another one of my favorites! This one I made in my dutch oven so I could finish it off in the oven. However, a skillet would work out perfect too! One Pot Lasagna Ingredients 2 T. Olive Oil 3 lbs. ground Beef, drained 1/2 chopped Onion or 1 T. Onion Flakes 2 cloves Garlic 6 T. Tomato Paste 1 T. dried Oregano 1 T. dried Basil 1 t. Sea Salt 1/2 t. Black Pepper 1 t. Garlic Salt 1/2 c. Parmesan Cheese, grated 1 jar (24oz) Sauce 1 1/2 c. Whole Milk Ricotta Cheese 3 c. Mozzarella Cheese (keep 1/2 back for topping) Directions Heat oil in Dutch Oven or Lg Skillet over medium-high heat. Preheat oven to 400*. Cook ground Beef until browned. Drain excess oil and put beef back in the pan. Add remaining ingredients (except 1/2 of Mozzarella Cheese). Cook and stir until fully combined. Best Ever BBQ Sauce

Y'all... I just made the best homemade BBQ Sauce that I have ever tasted!! If you are looking for a really easy and tasty sugar-free BBQ Sauce, you have got to make this one!! I found this recipe on Wholesome Yum's site. I followed the recipe word for word.... except... I added 1/2 tsp. Old Bay Seasoning. It's divine! Cheese Taco Shells

Ya'll, this recipe is so easy and fun! I was so excited to have 'tacos' again! Line a cookie sheet with parchment paper. Make round piles/areas (I spread it out a little, but don't leave any holes) of shredded cheese. Bake at 350* for 5-10 min. Mine started to get brown around the edges and bubbly in the center. Pull from over and drape over the edge of a pan or wooden spoon or something to give it the taco shell shape. Let cool. Then fill! That's it! So easy! Enjoy!!
