Buffalo Chicken Lettuce Boats

Buffalo Chicken Lettuce Boats


Ingredients
  • 2 lbs Chicken, boneless, skinless
  • 1/2 tsp. Onion Powder or 1/4 onion
  • 1/2 tsp. Garlic Salt or 4 cloves garlic plus salt to taste
  • 1/2 c. (or more) Buffalo Wing Sauce (I used Sweet Baby Rays)
  • 10 large Lettuce leaves (I used Romaine)
  • Blue Cheese Dressing or Ranch (or even Cesaer - that's what I used!)


Directions (2 Different Ways)
     On the Stove:
  1. Put chicken in a pot with enough water to cover. Bring to a boil and boil for 30 minutes (for tenders - 45min for breasts)
  2. Drain all but 1/4 cup-1/3 cup of the water.
  3. Shred the chicken. (I used my beaters to quickly and easily shred the chicken.)
  4. Add the Onion Powder, Garlic Salt, and Wing Sauce. Stir until combined.
  5. Line your lettuce leaves with your dressing of choice and add your chicken on top. Voila! Enjoy!


     In the Crockpot:
  1. Combine the chicken, Onion (or Powder), Garlic (or Gsalt), Salt, and 1 cup Water or Broth in a crockpot. Cook on high for 4 hours or low for 6 hours.
  2. Drain all but 1/4 cup - 1/3 cup of liquid.
  3. Shred the chicken.
  4. Add the Wing Sauce.
  5. Line your lettuce leaves with your dressing of choice and add your chicken on top. Voila! Enjoy!


This can also be a great snack/appetizer for a party or get-together!
